Method

Purée
In a high-speed blender combine almond milk, berries, tofu, lemon juice, Brazza™, salt, and xanthan. Blend until silky. Sprinkle inulin while blending (low speed) to avoid clumps. Final mix should be milkshake-thick.

Let stand
Keep covered at room temperature for 30 minutes.

Freeze & enjoy
Run in ice-cream machine 18–22 min to soft-peak. Dispense into cups; garnish with a few fresh berries or a mint leaf.
Compressor ice-cream makers reach lower temperatures; we recommend adding 20 g / ⅔ oz. glycerin in the blender to maintain scoopability. Without it, sugar-free bases made with Brazza™ tend to set rock-hard.
